Did you know that one of every three French fries around the world is supplied by McCain foods? For the last few weeks, I’ve been fortunate to intern at the company’s Potato Processing Technology Center. The PPTC is the most science-oriented part of McCain. Amongst a very diverse staff, engineers and scientists come together to innovate and develop top quality products. The establishment is equipped with labs and a pilot line that allow a multitude of research projects.
Since my first day, I’ve had the opportunity to assist with assays, develop critical thinking and invaluable laboratory skills. With the guidance from the team, I’ve even gotten to work on a study of my own concerning oil degradation. I wake up looking forward to each day because I get to work with very welcoming and supportive people who are always teaching me something new. The last few weeks opened my eyes to a new side of food processing, which I never thought could be this complex yet so interesting.
